Ingredients
- 1 whole chicken (organic, if possible)
- 2 large onions, sliced
- 3 garlic cloves, finely chopped
- 5 celery stalks, chopped into 1cm pieces
- 6 carrots, chopped into 1cm pieces
- 2 bunches of fresh parsley (left whole)
- 1 bay leaf
- Salt to taste (about 1 tbsp)
- Filtered water
- Optional: Somen noodles or parmesan to serve
Instructions
- Rinse the chicken and place it in a large pot.
- Cover with filtered water and bring to a boil. Once boiling, reduce to a gentle simmer and cook for 2–3 hours. This extracts the nutrient-rich collagen and minerals from the bones.
- While simmering, prep your veggies (carrots, celery, onions).
- After simmering, carefully strain the stock into another large pot or bowl.
- Add garlic, onions, celery, carrots, parsley, bay leaf and salt to the broth. Simmer until vegetables are tender (around 30 - 40 minutes).
- Discard the parsley stems.
- Let the chicken cool slightly, then shred the meat, removing all bones. Add the shredded chicken back into the broth.
- Serve hot or freeze into meal-size portions.
- For added comfort, serve with separately cooked noodles or a sprinkle of parmesan.
